2 oz. Dark rum
1 oz. Butternut squash syrup*
1 oz. Fresh lime juice
Combine ingredients in a shaker with ice. Shake and strain into a Martini glass.
*For Butternut squash syrup
1 cup Sugar
1 cup Coarsely grated butternut squash, peeled
1 cup Water
Combine sugar and water in a small saucepan and bring to simmer to dissolve sugar. Add squash and simmer until tender but not falling apart, 10-15 minutes. Let cool and strain through a fine mesh strainer. Chill at least 1 hour.
