1 ½ oz. CH Gin
¾ oz. Ginger liqueur
¾ oz. Fresh-squeezed lemon juice
¾ oz. House mint simple
¾ oz. Organic beet juice
Splash of soda water
Combine first 4 ingredients and shake. Strain over crushed ice. Add beet juice and stir. Top with a splash of soda water and garnish with a fresh mint sprig.
